  • 1 cup fresh pineapple, diced (you can use canned if fresh isn’t available)
  • 1/2 red onion, thinly sliced
  • 1 cup shredded lettuce (romaine, iceberg, or any favorite variety)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 avocado, sliced (optional)
  • 1 tablespoon fresh cilantro, chopped (optional)
  • 2 tablespoons ranch dressing or Greek yogurt (optional, for drizzling)
  • Lime wedges for garnish (optional)

Instructions

1. Prepare the Chicken

  • Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side or until fully cooked and golden brown. Use a meat thermometer to ensure the chicken reaches 165°F (74°C) in the center.
  • Add BBQ Sauce: Once the chicken is cooked, reduce the heat to low. Pour the BBQ sauce over the chicken and coat it evenly. Let it simmer for another 2-3 minutes, allowing the sauce to thicken and caramelize slightly.

2. Assemble the Wrap

  • Slice the Chicken: After the chicken has rested for a couple of minutes, slice it into thin strips against the grain. This will make the chicken easier to eat and distribute evenly in the wrap.
  • Prepare the Tortillas: Warm the tortillas in the microwave for 20-30 seconds or heat them in a dry pan to make them more pliable and easier to fold.
  • Assemble the Ingredients: Place the warmed tortilla flat on a clean surface. Start by adding a few spoonfuls of the shredded lettuce in the center of the tortilla, followed by slices of BBQ chicken, diced pineapple, thin slices of red onion, and avocado slices. If desired, sprinkle shredded cheese over the top and drizzle with ranch dressing or Greek yogurt.

3. Roll and Serve the Wraps

  • Fold the Wrap: Carefully fold the sides of the tortilla inwards and then roll it tightly from the bottom up to enclose all the ingredients.
  • Slice and Serve: Once the wraps are rolled, cut them in half diagonally for easy serving. Optionally, garnish with chopped cilantro and lime wedges on the side for added freshness.
