Instructions

Prepare the Potatoes:

  2. Prepare the Potatoes: Wash the potatoes thoroughly and cut them into evenly-sized chunks, about 1 to 1.5 inches each. If you’re using baby potatoes, you can halve or quarter them depending on their size.
  3. Dry the Potatoes: After washing, pat the potatoes dry with a paper towel or clean kitchen towel. This step helps achieve the crispy texture when roasting.

Season the Potatoes:

  1. Toss with Olive Oil: In a large mixing bowl, add the cut potatoes and pour in the olive oil. Toss the potatoes to coat them evenly with oil. This will help them crisp up in the oven.
  2. Add Seasonings: Sprinkle the garlic powder, onion powder, rosemary, thyme, salt, and black pepper over the potatoes. Toss again to ensure the seasonings are evenly distributed. If you like a bit of acidity, you can add a squeeze of lemon juice at this stage.

Roast the Potatoes:

  1. Transfer to a Baking Sheet: Spread the seasoned potatoes out on a baking sheet in a single layer. This ensures they roast evenly and get crispy on all sides.
  2. Roast: Place the baking sheet in the preheated oven and roast the potatoes for 35-40 minutes, or until they are golden brown and crispy. Halfway through cooking, give the potatoes a stir or shake to ensure even browning.
  3. Check for Doneness: Test the potatoes by poking them with a fork. If they are tender inside and crispy outside, they are done.

Serve the Roasted Potatoes:

  1. Garnish and Serve: Once the potatoes are finished roasting, remove them from the oven and transfer them to a serving dish. Garnish with freshly chopped parsley and a squeeze of lemon juice if desired.
