Ingredients

  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

  • 2 tablespoons unsalted butter

  • 3 tablespoons brown sugar, packed

  • 1 teaspoon ground cinnamon

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

  • 1 tablespoon cornstarch (optional, for thickening)

  • 1 egg (for egg wash, optional)

Instructions

Prepare the Apple Filling:

Prepare the Pastry:

  1. Roll Out the Pastry: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the puff pastry sheet to about 1/8-inch thickness. If using store-bought puff pastry, simply unfold the sheet and cut it into squares.

  2. Cut into Squares: Using a sharp knife, cut the puff pastry into 8 equal squares, or more if you prefer smaller turnovers.

Assemble the Apple Turnovers:

  1. Fill the Pastry: Spoon a generous tablespoon of the cooled apple mixture onto the center of each pastry square.

  2. Fold the Pastry: Fold the pastry over the filling to form a triangle, pressing the edges together to seal. You can use a fork to crimp the edges for a decorative touch.

  3. Prepare for Baking: If desired, brush the top of each turnover with a beaten egg to give them a golden, shiny finish while baking.

Bake the Apple Turnovers:

  1. Transfer to Baking Sheet: Place the turnovers onto a parchment-lined baking sheet, spacing them evenly apart.
